HOW TO COOK COTE DU BOEUF
Rib of beef
4 Garlic cloves, crushed
Sprigs of thyme
Put the rib of beef in a tray, add 4 crushed cloves garlic, few sprigs of thyme, salt, black pepper, olive oil. Mix together and leave for an hour or overnight.
Turn heat up and get a pan hot! Add the rib and sear both sides till lovely and brown, (few mins each side) add a couple of tablespoons of butter and baste both sides... A lot!
Add to a roasting pan and place in the oven for around 20 mins for medium rare 25/30 for medium.
Get out the oven and let it rest for 15 mins. This helps it to relax and it should just melt in your mouth.
