MONKFISH SCAMPI WITH TOMATO COMPOTE
Serves 4
INGREDIENTS FOR SCAMPI 1 monkfish tail 250g flour 15g yeast 1 tbsp salt 1 tbsp sugar 300/350ml of lager INGREDIENTS FOR TOMATO COMPOTE 1 punnet if cherry tomatoes 2 cloves garlic 3 shallots 3 tbsp of balsamic vinegar 1 red chilli Sea salt to taste METHOD
To prepare the beer batter, mix all ingredients together and leave out to help activate the Yeast. Dice monkish into 2cm , coat in flower and dip in batter, fry at around 190 until golden. Around 2 to 3 mins. For the compote, put the oil in a pan, heat up then Add shallots, garlic and chilli. Chuck in rest of ingredients and turn down low until tomatoes are really soft. |
